The harvest period for rhubarb begins in mid-May and goes on until early June. The rhubarb tends to take on the flavor of the other ingredients that it is paired with and it makes for a great addition to several recipes. However, although the stalks of rhubarb can be consumed, the leaves are toxic to humans.  Rhubarb is also a great source of vitamin K1, which is important for blood clotting and bone health.</p>
