The sugar would then dry in strings and be served as a dessert.  Obviously very time consuming...only the wealthy could afford spun sugar desserts...until 1897, when Dentist William Morrison and confectioner John C. Wharton invented machine-spun cotton candy....they introduced it at the 1904 World’s Fair as Fairy Floss. Fairgoers loved it and bought over 68,000 boxes for 25¢ a box.</p>
