<p>Ever curious and always looking at the positives, Claudia Curici has accomplished great things. Her travels have taken her from her home country of Romania, to Dubai, to Dallas, to Denmark, and back to Romania - at least for now. She's become a brilliant communications expert, a highly talented photographer, a two-time published author - all before finding her true calling.</p> <p>She is an Integrative Nutrition Health Coach and the founder of “Creative in my Kitchen”, a food and lifestyle blog which shares her health journey and posts recipes that are lectin-light, gluten-free, sugar-free, and nasties-free, in general.
